白色片狀結晶性或結晶性粉末。呈苦味中的*甜味,能改善果汁飲料、清涼飲料等的風味的味質(zhì)。有特殊風味,可作香原料。熔點274℃(分解)。易溶于水(25℃,36.1%),微溶于乙醇。
